Katherine Pflepsen (Glass)

November 9, 1927 – January 27, 2021
Age 93 of Eagan. People called her Katherine, Kathy, and Cat, because every Halloween she was a cat.
Our mother was beautiful, funny, strong, and sharp as a nail. This girl was valedictorian at her graduation and could spell any word. She did math in her head without a calculator. She was so classy. She dressed up every day and didn’t leave home without her earrings and orange gold lipstick. In high school they would call out “There goes glassy with the classy chassis!” Her favorite color was turquoise. She was a really amazing cook, always making wonderful creations, fancy dinners and drinks, always skimming through her cookbooks. She was best known for her delicious famous banana, carrot cake and brandy alexanders.
She enjoyed life, she loved flying and traveled many places; her favorite was the European cruise. She loved airplanes and always said she wanted to be a pilot, but instead at 19 years old she had her first of 6 kids. She had 14 grandkids and 14 great grandkids, whom she loved with all her heart and soul.
She loved her coffee and cream in the morning. Her favorite candy was toffee and dark chocolate milky ways.
She worked her whole life starting at age 12 making marshmallow sundaes for .12 cents each. She loved to work and was very skilled. She worked for European Health Spas where she brought home many trophies from her sales. She even started her own health club called Vita Nova. She was also a realtor. She retired only a few years ago from her full time job at Nordstrom’s cosmetic department, where she was top in sales.
She treasured her mother, one of her favorite memories of when she was little was her family going on family picnics.
She loved music and poetry. Her favorite poems were Face on the Ballroom Floor and Osler Joe, which is an over 1,000 word poem she memorized and could still recite just as she had done in high school.
She always thought of others before herself. She loved her family and friends fiercely and with all of her heart. She was an amazing grandma who loved and treasured her grandkids. She had so many friends and family that were dear to her heart, too many to name, but you know who you are and she loved you.
Some of her favorite things: her favorite turquoise jewelry, grasshoppers (the drink), lilacs, horse races (especially $1 hotdog days), the movie “A Place in the Sun”, and actress Liz Taylor.
She is now in Heaven with Jesus. She is with her beloved daughter, Teresa, whom she missed so terribly; her sweet precious granddaughter, Lisa; her much loved older brother, Dick; her dearest mother, Katherine Cecilia, whom she treasured, and her father, Milton.
Survived by children, Richard, Michael, Coleen, Dawn, and Katie; her brother, Tom; and sisters, JoAnne and Marion. She had so many people that loved her, family and friends too many to name but you know who you are. Please know she loved you all very much.
Thank you for being our Mama, we will all miss you terribly beyond words.
There are so many things we can say about her life. The list goes on and on. But suffice it to say, her hallmark was kindness and forgiveness. Never taught by words, but only by example. We honor all of her accomplishments and trials but none of these are her true identity. Her true identity is her spirit, a light of consciousness with eternal Love, eternal Peace and Joy. Made in His image.

Due to Covid limitations, her Celebration of Life is limited to just close family at All Saints Catholic Church in Lakeville, MN on Tuesday February 2, 2021.
